Pour-Over Coffee: A Step-by-Step Guide

By following these simple steps and experimenting with different variables, you’ll soon discover your perfect pour-over recipe in the comfort of your home!

Step 1: Gather Your Tools:

Before you begin, make sure you have the following tools and ingredients:

  • Freshly roasted coffee beans
  • Burr grinder
  • Pour-over dripper (such as a Chemex)
  • Paper filter
  • Goose neck kettle
  • Scale
  • Timer
  • Mug

Step 2: Grind Your Coffee:

Start by grinding your coffee beans to a medium-fine consistency, similar to coarse sand. The grind size is crucial for pour-over coffee, as it affects the extraction rate and flavor profile.

Step 3: Prepare Your Filter:

Place a paper filter in the pour-over dripper and rinse it with hot water. This helps remove the taste of the filter and preheats the pour-over dripper ensuring a consistent temperature throughout the brewing process. Discard the rinse water before proceeding.

Step 4: Measure and Heat Water:

Measure out the desired amount of water for your coffee using the scale. The ratio I like to use is 10 ounces of water to 18 grams coffee beans. Heat the water in the gooseneck kettle to around 200-205°F.

Step 5: Bloom the Coffee:

Place the filter on the chemex /pour over dripper and add the ground coffee. Start the timer and pour just enough hot water to saturate the coffee grounds evenly, ensuring they’re fully immersed. Allow the coffee to bloom for 30 seconds, during which time carbon dioxide is released, resulting in better extraction.

Step 6: Start Pouring:

After the blooming phase, begin pouring the remaining hot water in a slow, circular motion, starting from the center and going outward. Aim to maintain a consistent pour rate. Try not to overfill the filter or pour too quickly, as this can lead to an uneven extraction.

Step 7: The Brew Time:

As you pour, keep an eye on the timer to control the brew time. A typical pour-over brew takes around 3-5 minutes, depending on factors like grind size, coffee freshness, and personal preference. Adjust your pouring speed or grind size accordingly to achieve the desired extraction.

Step 8: Enjoy Your Coffee:

Once the brewing is complete, discard the used coffee grounds and filter. Give your freshly brewed pour-over coffee a gentle stir to ensure uniformity, then pour it into your favorite mug!
